Prepared Chocolate Chip Cookie Ice Cream Sandwiches

As we wrap up the Christmas festivities, there’s nothing better than chocolate chip cookie ice cream sandwiches ready to end the day.

Whether you’re catching up with the family or taking part in Christmas activities, you can nibble on these sandwiches.

Chocolate chip cookie ice cream sandwiches


  • 120 g unsalted butter, softened
  • 1/2 cup (110 g) icing sugar
  • 1/3 cup tightly packed (80 g) brown sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of soft peanut butter
  • 1 spoonful of Nutella
  • 1 1/4 cups (175 g) plain flour
  • 1/2 teaspoon baking soda
  • 1/3 cup (35 g) cocoa powder
  • 1/2 cup (100 g) milk chocolate chips
  • Chocolate ice cream, to serve

  1. Beat the butter and sugars in a stand mixer fitted with the paddle attachment until light and fluffy.
  2. Add the egg and vanilla, beating well, then beat in the peanut butter and Nutella. Turn the mixer off, then use your hands to fold in the flour, baking soda, cocoa, chocolate chips, and 1/2 teaspoon of the salt flakes.
  3. Place a sheet of baking paper on a clean work surface, then place half the dough on the paper and form into a thick log 6cm in diameter. Roll the paper tightly to close, pinching the ends and twisting to tighten. Seal it in plastic wrap. Repeat with the remaining dough. Freeze for up to 3 months or, if using immediately, refrigerate for 1 hour to harden.
  4. When ready to bake, preheat the oven to 180°C. Grease a baking tray and line it with baking paper.
  5. Cut as many 1cm thick cookies as you need at a time. Spread on the tray, leaving 2 cm between cookies. Bake the cookies straight from the refrigerator or freezer for 12 minutes or until one cookie moves on the baking sheet when pushed gently with your finger. Cool on the tray.
  6. If making ice cream sandwiches, place small scoops of ice cream on a cold baking sheet lined with parchment paper. With parchment paper on top and working in batches, flatten with your hand to the size of the cookies. (If necessary, return the flattened ice cream to the freezer while you prepare the remaining ice cream.)
  7. Sandwich each piece of ice cream with two cookies and serve immediately or freeze to serve within 4-6 hours.
